Easy Buddha Bowl


Prep Time: 10 minutes

Cook Time: 20-25 minutes

Serves: 4


Ingredients

Kale

Brown Rice

Sweet Potato

Brussels Sprouts

Lentils

Avocado

½ a lemon

Minced garlic


Directions:


  1. In a pot, boil rice until fully cooked. Set aside.

  2. In a wok, add a teaspoon of oil and minced garlic. Let this cook for about 3-4 minutes. DO NOT LET GARLIC BURN!

  3. Add sweet potato, brussels sprouts, and lentils*. Cook for about 15 minutes or until veggies are soft.

  4. Once the veggies are cooked add the kale. You want to add the kale last so you don’t overcook it. You’re looking to “steam” the kale. Cook the kale for no more than 5 minutes.

  5. Use your rice you set aside earlier as your base. Add 2 scoops of your veggie mixture.

  6. Garnish with avocado and a lemon squeeze!

*Kinky Tip: If you buy lentils and foods of the like, dry you will need to cook this separate and ahead of time. Dry beans and other legumes take upwards of 2+ hours to cook. Trader Joe's has AWESOME lentils pre-steamed!
