Avocado "Nice" cream

This recipe is SUPER easy, so we’re not going to go into some long drawn out explanation of why avocado ice cream is so good because who doesn’t like avocados? Or ice cream? Now you can have both! Here is just another use for the amazing and versatile fruit. Yes, an avocado is a fruit. But we will note that we call this "nice" cream because what happens at the dairy farm is not only depressing, but the conditions in which dairy cows live are despicable and deplorable. Not to mention, dairy is incredibly bad for you!

You Will Need

1 avocado

½ cup confectioners sugar (add more according to taste)

1 lemon (juiced)

¾ cup of Flaxseed or Oat milk (recommended for thickness)

(Some) lemon zest from lemon

  1. Using 1 avocado, in a blender combine with confectioners sugar, 1 lemon juiced, flaxseed milk, and some lemon zest from previous lemon.

  2. Tada! You’re done. This makes only 2 servings, so put them in a ice cream glass (or glass container) and put in freezer for about 4 hours. Once you take it out, you want it to be creamy like a sorbet so let it thaw out some before eating.

  3. Enjoy!

Freeze for about 4 hours (once frozen, take out and let thaw into sorbet).
