Deep Fried Corn Fritters

Prep Time: 10 minutes

Cook Time: 30 minutes 

Serves 6-8 Fritters

Ingredients

2 cups frozen corn

1 cup cornmeal

1 cup spinach (or kale, or collard greens)

½ cup flour (I use chickpea flour) 

½ diced onion 

2 tablespoons garlic

2 tablespoons Ms. Dash

Oil for Frying

Salt and Pepper to taste

Directions

First, add oil to pan to heat while preparing fritters. The pan should be about ¼ of the way filled

Combine your “wet” ingredients first. The corn, onions and spinach should be mixed thoroughly.

Next, add your “dry” ingredients. 

The mixture will be dry, so add water or a plant based milk to moisten it. The mixture should be wet, almost a pancake consistency. Use your judgement to add more water/milk or corn meal as needed

By this time, your oil should be hot. Drop a small amount of mixture to test it.

Using a large spoon, or your hand, patty and plop the mixture in the oil. Each side should take about 5-6 minutes.

I threw together some mac & cheese w/ broccoli as sides, but it's your dish so get creative!
